Regardless of the number of olives that a plant product, the amount of oil that will be extracted depends on rainfall and watering between August and September.
The decisive factor for the yield and good quality of the olives is, in fact, the amount of water that plants absorb in this period, in which occurs the so-called "inoliction", that is the formation of vegetable fats in the pulp, which will give origin to oil.
Any rain or watering in September and October, maybe can increase volume of olives, but threaten the quality and don't increase the amount of oil that will be produced.
Of fundamental importance is the monitoring, through the appropriate traps, of the oil fly, which could compromising in a very serious way the harvest and undo all the measures adopted previously.
