In the past because of the huge demand for coal, which is used for many different uses, in most of the Alpine and Apennine territory was widely used the technique of charcoal pit.
Skill and experience of masters charcoal burners was put to good use for the raising of conical hillocks created by stacking beech wood around a central fireplace and covered with soil.

The mastery with the preparation of charcoal pit, involved the successful results with a good quality coal. This system exploited the imperfect combustion of the wood, due to poor oxygenation, but had to be done with precision in order to avoid incineration of the entire pit. After about 15 days of work, the charcoal was ready and could be dismantled the mound, cooling as coal with the soil.
