The olive tree is pruned in the winter, when the plant slows down its vegetative functions, roughly between January and February, when it should be finished the period of frosts.
One of the most common methods of farming is that of polyconic vase, extremely advantageous from the point of view of production, although it requires some more attention.
The stem, truncated to about 80-100 cm branches into 3 main branches, inclined by about 45 ° in the initial portion and that then develop vertically (this avoids the possible breaking in case of snow).
The main advantages of this type of pruning are: the optimization of exposure to light, the period for entry into production shortened and the simplification in the harvest, that can easily be performed manually or mechanically with pneumatic or electric harvesters. This pruning, which must be carried all the years, has also the great advantage of reducing the production alternation, although this depends also on other factors.
