For many winter vegetables you can operate an operation called whitening. Typically it's carried out on vegetables such as curly endive, endive, leek, fennel, celery and cardoon and consists of a ligature made on the bush to avoid exposure to sunlight.
The plan, therefore, is protected from light, avoiding the formation of chlorophyll and making more tender and crispy vegetables.
For the celery and the cardoon whitening is performed by wrapping the plants with sturdy paper at least 20 days before harvest for celery, about a month for the cardoon. Endive, escarole or romaine lettuce can be tied with a string about ten days before harvest; leek and fennel are instead simply prop with the ground. Of crucial importance it's do all this in the absence of moisture, as this may cause mold or rot.
