November is the penultimate month of the year, characterized by a cold and rainy climate that anticipates the beginning of winter.
It is traditionally dedicated to the dead, with the Christian feast of All Saints on the 1st and All Souls Day on the 2nd, which have ancient origins from which also draws the Anglo-Saxon feast of Halloween.
During this month, traditionally takes place the fermentation of the must on the 11th, St. Martin.
