The growth of the olives takes place in summer and requires great availability of water during this period. Although this has been and continues to be one of the hottest and dry summers of the last decade, it's advisable to use every possible means to irrigate the olive groves properly, in order to guarantee an optimal yield between October and November.
Between the end of August and the first half of September the olives, in fact, undergo a process which determines the formation of particles of fats inside the pulp, particles that will constitute the oil. In conditions of suffering due to lack of water, the olives will not develop, do not complete the phase of become oily and, in more severe cases fall down.
On the contrary, rains or irrigations will help the development and the complete maturation, guaranteeing excellent crops and yield, as long as they have proceeded to the fight against the fly oil. Any late rain or irrigation from late September to October, although they make the fruits larger, do not count in the become oily process that has already been concluded.
