The olive fly (Bactrocera oleae) is considered the worst enemy of the olive harvest. Present throughout Italy, in the Mediterranean basin, South Africa and California, it is capable of causing extensive damages to oil production. The grubs dig galleries in the olive pulp causing rot and adults convey the so-called olive mange (Pseudomonas savastanoi). In the event that you could save a minor part of the harvest, from this, if damaged, would derive a poor quality oil, with very high levels of acidity and a compromised aroma with hints of mold and rot.
