This vegetable has ancient and controversial origins derived mostly from its resemblance to another similar white root, the parsnip.
The carrot also exists in the wild form with a white subtle root and a quite bitter taste, but the version grown as we know was originated around 5000 years ago in Afghanistan, where there was purple and yellow. Over time it has also spread to Europe, but of the two, the more flavorful it was purple, which unfortunately had the great defect of coloring other foods with which it came into contact and was soon relegated to animal feed. In the seventeenth century, however, in honor of the Orange family, the skilful dutch horticulturists obtained the orange carrot, which spread rapidly and continues today to be favorite everywhere.
