After the early grape harvest of this year, the racking can be carried out approximately from mid-September onwards. This is an operation necessary to eliminate all residues remaining from fermentation, such as yeasts and solid parts. There is no precise date, but according to the wine that is being produced, it is advisable to measure the sugar level and monitor the fermentation. Wines intended for immediate consumption drawing before the end of the fermentation, the wines produced with very ripe grapes when there are no more residual sugars and wines destined for long maturation after a few days after the end of fermentation.
The racking consists therefore in a transfer, being careful to leave separate the deposit on the bottom of the containers, or by carrying out a preliminary filtration.
