This month is features of two of the most important agricultural events of the year: the olive harvest and fermentation of wine.
Depending on the variety, in fact, the olive harvest is from October to December and beyond, while traditionally the transformation from wort in wine occurs around the 11th of November, St. Martin.
This period is, therefore, the most appropriate to perform the racking and the filtering of the wine, which allows to separate the dregs and store wine.
The crop typical of this month is characterized by: fennel, cabbage, broccoli, turnip greens, turnips, lettuce, radicchio, chicory, pomegranates, oranges, clementines, kiwis, apples, pears, table grapes and chestnuts.
